The Paris Popup at Nord Pinus
Every summer, the Nord-Pinus – a legendary hotel in Arles, in the South of France – hosts a pop-up restaurant on its terrasse. It’s located right on one of the major squares of town, where everyone always runs into each other.
Like last year, the chef Harry Cummins and sommelier Laura Vidal are running the show. They serve simple and refined dishes, made with local products and paired with a great selection of natural wines. I remember an incredible gaspacho, as well as a dish of emulsified fish with black rice from Camargue.
